Zahn’s Thrawn trilogy was my core Star Wars story outside the original three movies for decades. Maaaaybe the first couple of seasons of Mando has since caught up to it, but I still place it on a pedestal.
To be clear, that’s not a knock on season 3, I liked that as well. But the first season, in particular, is on a pedestal for me. It hit at the exact right moment and had the exact right tone, meaning my entire family watched it together each week with anticipation, which was a really special thing. (WandaVision was similar in that regard.)
I know what you mean. I never got around to finishing season 3, so I can't speak to its overall quality. The first few episodes had the feel of an unnecessary sequel, which isn't necessarily a bad thing, but I found those first two seasons to be extra special.

I also enjoyed those first two seasons of The Mandalorian -- the best live-action Star Wars of the 21st century.
