I liked how each course had its own "presentation" to the audience, but I wasn't sure if it was also trying for anything more significant with that structuring. Did you have any thoughts on the individual dishes?
I wondered if the menu presentations were meant to depict "cooking as art" -- taking the writing idea of "bleeding on the page" and applying that to chefs (sometimes in a more literal sense). Regardless of any symbolism, the various menu entries provided a nice structure to the movie and a strong sense of escalation. The earlier dishes were just kind of weird and a little pretentious (like the absence of bread), but by the end, it's like something a Batman villain would do.
